A comforting and versatile potato salad recipe perfect for picnics and gatherings.

Ingredients

  • 2 pounds red potatoes
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1/2 cup red onion, chopped
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the red potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.
  2. Cool the cooked potatoes by draining them and setting aside to cool.
  3. Chop the cooled potatoes into bite-sized pieces, leaving the skin on for texture.
  4. Prepare the dressing by combining mayonnaise, mustard, chopped red onion, and dill in a mixing bowl.
  5. Mix the chopped potatoes into the dressing, tossing gently until well coated.
  6. Season with salt and pepper to taste, cover, and refrigerate for at least an hour.

Notes

The potato salad gets better as it sits. Great as a side dish for grilled meats and barbecues.
