Classic Mexican Horchata

A nostalgic and creamy Mexican beverage made with rice, cinnamon, and vanilla, perfect for hot summer days.

Ingredients

  • 1 cup rice
  • 1 cinnamon stick
  • 5 cups water
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar
  • Pinch of salt

Instructions

  1. Rinse the rice under cold water until the water runs clear, then place it in a bowl. Add the cinnamon stick and pour in 2 cups of water. Let this soak for at least 3 hours or overnight.
  2. Blend the rice and cinnamon mixture with an additional 2 cups of water until smooth.
  3. Strain the mixture through a fine mesh sieve or cheesecloth into a pitcher to separate the liquid from the rice solids.
  4. Add the remaining 1 cup of water, vanilla extract, sugar, and a pinch of salt to the strained liquid. Stir well to combine.
  5. Chill the pitcher in the refrigerator before serving over ice.

Notes

Store leftovers in an airtight pitcher for up to 3 days. Adjust sweetness to taste and add various flavorings if desired.
