Delightful muffins combining the natural sweetness of carrots and apples with wholesome oats and spices, perfect for breakfast or snacks.

Ingredients

  • 1 cup grated carrots
  • 1 cup grated apple
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/2 cup raisins or coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the grated carrots, grated apple, whole wheat flour, all-purpose flour, rolled oats, brown sugar, baking soda, baking powder, cinnamon, and salt together.
  3. Whisk together the eggs, honey (or maple syrup), and vegetable oil in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the chopped nuts and optional ingredients like raisins or shredded coconut.
  6. Scoop the muffin batter into the prepared muffin tins, filling each cup about two-thirds full.
  7. Slide the muffin tin into the preheated oven and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
