A comforting and versatile classic potato salad, perfect for summer picnics and barbecues.

Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped green onions
  • 1/4 cup chopped celery
  • 1/4 cup chopped pickles
  • Salt and pepper to taste
  • Paprika for garnish (optional)

Instructions

  1. Boil the potatoes in salted water until tender, about 15 minutes.
  2. Prepare the dressing by mixing mayonnaise, Dijon mustard, green onions, celery, and pickles in a large bowl.
  3. Combine the cooled potatoes with the dressing gently to coat without mashing.
  4. Season with salt and pepper to taste and stir to evenly distribute flavors.
  5. Chill in the refrigerator for at least 1 hour.
  6. Serve with a sprinkle of paprika on top, if desired.

Notes

Optional to add crumbled bacon or diced hard-boiled eggs for extra flavor and protein.
