A vibrant and hearty dish made with poached eggs in a spiced tomato sauce, perfect for breakfast, lunch, or dinner.

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 ounces) crushed tomatoes
  • Salt and pepper to taste
  • 6 eggs
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until they become soft and fragrant, about 5-7 minutes.
  2. Stir in the minced garlic along with the ground cumin and paprika. Sauté for an additional 1-2 minutes, allowing the spices to release their inviting aromas.
  3. Pour in the crushed tomatoes and season generously with salt and pepper. Let the mixture simmer and bubble for about 10-15 minutes, stirring occasionally.
  4. Using a spoon, make small wells in the sauce, and gently crack the eggs into each well. Cover the skillet with a lid and cook until the eggs are set to your liking, about 5-8 minutes for runny yolks or longer for firmer ones.
  5. Sprinkle fresh parsley or cilantro over the top for added color and freshness before serving. Enjoy warm, accompanied by crusty bread for dipping.

Notes

Pair with warm crusty bread and consider adding a dollop of feta cheese for extra flavor. Store leftovers in the fridge for up to 3 days.
