Delightful Coconut Almond Truffles that bring the essence of paradise to your kitchen, featuring shredded coconut, almond meal, and a decadent dark chocolate coating.

Ingredients

  • 1 cup shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup almond meal
  • 24 whole almonds
  • 8 ounces dark chocolate (for coating)
  • 1 tablespoon coconut oil (optional, for chocolate smoothness)

Instructions

  1. In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and almond meal until well combined.
  2. Refrigerate the mixture for about 30 minutes to firm up.
  3. Scoop out small portions of the chilled mixture and roll them into balls. Press a whole almond into the center of each ball.
  4. Place the truffles onto a parchment-lined tray and freeze for another 15 minutes.
  5. Melt the dark chocolate with coconut oil until smooth.
  6. Dip each truffle in the melted chocolate and return them to the tray.
  7. Allow the chocolate to set before serving.

Notes

For smoother chocolate coating, add coconut oil. Store in an airtight container for up to a week.
