4 chicken breasts
1 cup coconut milk
1 cup long-grain rice
2 cups chicken broth
1 tablespoon soy sauce
1 tablespoon olive oil
Salt and pepper to taste
Chopped cilantro for garnish
Instructions
Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper and cook until browned on both sides, about 5-7 minutes per side.
Remove chicken from the skillet and set aside to rest.
Add rice to the skillet and toast for 1-2 minutes.
Pour in coconut milk, chicken broth, and soy sauce, then stir to combine.
Return the chicken to the skillet, cover, and reduce heat to low. Cook for about 20 minutes or until rice is tender and chicken is cooked through.
Fluff rice with a fork and garnish with chopped cilantro before serving warm.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat with a splash of chicken broth.
