A delightful coconut and pecan frosting that elevates any dessert to a new level of delight.

Ingredients

  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large egg yolks

Instructions

  1. In a saucepan over medium heat, combine the sugar, evaporated milk, and butter. Cook, stirring constantly, until the butter is melted and the mixture is smooth.
  2. Add the egg yolks to the mixture, stirring constantly for about 5-7 minutes, until it thickens slightly.
  3. Remove the saucepan from the heat and stir in the shredded coconut, chopped pecans, vanilla extract, and salt.
  4. Allow the frosting to cool slightly before using it to frost your favorite desserts.

Notes

Store any unused frosting in an airtight container in the refrigerator for up to one week. Rewhip gently before use.
