A tropical twist on classic banana bread combining ripe bananas, crushed pineapple, and shredded coconut for a moist and flavorful treat.

  • 3 ripe bananas
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mash the bananas until smooth and mix in melted butter.
  3. Stir in sugar, beaten egg, and vanilla extract until well combined.
  4. Incorporate crushed pineapple, shredded coconut, baking soda, and salt.
  5. Add all-purpose flour gently to the wet mixture and stir until just combined.
  6. Pour the batter into the prepared loaf pan evenly.
  7. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Store in an airtight container at room temperature for up to 3 days or freeze individual slices for up to 3 months.
