Delightfully creamy cheesecake bites enveloped in a crunchy graham cracker shell and rolled in coconut.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut, divided
  • 1/2 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 1/4 cup white chocolate, melted (optional)

Instructions

  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add the powdered sugar and vanilla extract, mixing until well combined.
  3. Stir in 1/2 cup of shredded coconut.
  4. In another bowl, mix the graham cracker crumbs and melted butter until combined.
  5. Form the cheesecake mixture into small balls, then roll them in the graham cracker mixture.
  6. For an extra touch, dip the bites in melted white chocolate and then roll them in the remaining shredded coconut.
  7. Refrigerate for at least 30 minutes before serving.

Notes

These bites can be stored in an airtight container in the refrigerator for up to five days or frozen for up to three months.
