A simple, vibrant dish featuring roasted rainbow carrots tossed with fresh herbs and olive oil, perfect as a delightful side for any meal.

  • 1 lb Rainbow Carrots
  • 2 tbsp Olive Oil
  • 1 tsp Fresh Rosemary, chopped
  • 1 tsp Fresh Thyme, chopped
  • 1 tbsp Fresh Parsley, chopped
  • Salt and Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash, peel, and cut the rainbow carrots into uniform pieces, about 1-2 inches long.
  3. Combine the carrots with olive oil, fresh rosemary, thyme, parsley, salt, and pepper in a large mixing bowl.
  4. Spread the coated carrots on a rimmed baking sheet in a single layer.
  5. Place the baking sheet in the oven and roast for 20-25 minutes, stirring halfway through.
  6. Serve the carrots warm, drizzled with extra olive oil and a sprinkle of flaky sea salt.

Notes
