Crispy on the outside, bursting with cheesy goodness on the inside, these Rattlesnake Bites are perfect for gatherings and game days.

Ingredients

  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños (fresh or pickled)
  • 1/4 cup green onions, chopped
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, and chopped green onions until well blended.
  2. Cover the bowl and chill the mixture in the refrigerator for 30 minutes.
  3. Scoop out small portions of the cheese mixture and roll them into balls.
  4. Prepare your breading station with flour, beaten eggs, and a breadcrumb mixture.
  5. Dredge each cheese ball in flour, dip it in egg, and coat it in breadcrumbs.
  6. Heat oil in a deep fryer or large pot to 350°F (175°C) and fry the cheese balls in batches for 3-4 minutes until golden brown.
  7. Remove the cheese balls from the oil and drain on paper towels.

Notes

Serve with creamy ranch dressing or spicy salsa for dipping. Optionally, you can bake them for a lighter version.
