A delightful homemade version of the iconic Starbucks Coffee Cake with a tender crumb and rich streusel topping.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven and prepare the pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the eggs, milk, and vanilla extract, mixing until fully incorporated.
  4. Combine the flour, baking powder, and salt in another bowl. Gradually add this to your wet ingredients, folding gently.
  5. Make the streusel mixture by mixing brown sugar, cinnamon, and chopped nuts (if using).
  6. Layer half of the batter into the prepared pan, sprinkle half of the streusel on top, add the remaining batter, then top with the rest of the streusel.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack and allow to cool completely before serving.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freeze individual slices for up to 2 months.
