Delightful corn fritters with a crispy exterior and juicy corn inside, perfect for any occasion.

  • 2 cups corn kernels (fresh or frozen)
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Mix the Base Ingredients: In a large bowl, combine the corn kernels, flour, milk, egg, baking powder, salt, and pepper. Stir well until everything is thoroughly combined. The mixture should be thick and hold its shape.
  2. Heat the Oil: In a skillet, pour in some oil and heat it over medium heat. You want enough oil to cover the bottom of the skillet. It should be hot enough that a drop of the corn mixture sizzles upon contact.
  3. Fry the Fritters: Using a spoon, drop spoonfuls of the corn mixture into the hot oil. Be careful not to overcrowd the skillet; it’s better to work in batches.
  4. Flip to Perfection: Fry the fritters for about 3-4 minutes on each side or until they’re golden brown. You’ll know they’re ready to flip when they release easily from the skillet.
  5. Drain and Serve: Once fried, use a slotted spoon to remove the fritters and let them drain on paper towels. Serve warm, perhaps with a dollop of sour cream or a zesty salsa for an extra kick.

Notes

For added flavor, consider mixing in cheese or spices. Store leftovers in an airtight container in the fridge for up to 2 days.
