A light and fluffy cloud bread made with cottage cheese and juicy blueberries, perfect for breakfast or as a snack.

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup almond flour
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1 cup blueberries
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the cottage cheese and eggs until smooth.
  3. Combine the almond flour, sugar, baking powder, and salt in another bowl.
  4. Gradually mix the dry ingredients into the wet mixture until well combined.
  5. Gently fold in the blueberries with a spatula.
  6. Pour the mixture onto the prepared baking sheet and spread it evenly.
  7. Bake for 25-30 minutes or until golden and springy to the touch.

Notes
