Instructions

  1. In a large bowl, combine the cottage cheese, flour, baking powder, and salt.
  2. Next, drizzle the olive oil into your mixture and mix until combined.
  3. Gradually add water, one tablespoon at a time, until a soft dough forms.
  4. Turn the dough out onto a floured surface and knead gently until smooth and elastic, about 5 minutes.
  5. Once smooth, divide the dough into 6-8 equal pieces and shape each into a ball.
  6. Using a rolling pin, flatten each ball into a disc about 1/4 inch thick.
  7. Heat a skillet over medium heat and cook each flatbread for about 2-3 minutes on each side until golden brown.
