  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar (optional)
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Combine the ingredients: In a bowl, mix together the cottage cheese, all-purpose flour, eggs, baking powder, salt, sugar (if using), and vanilla extract until all the ingredients come together in a thick batter.
  2. Prepare the skillet: Heat a skillet over medium heat and add a little butter or oil to coat the bottom.
  3. Pour the batter: Once the skillet is ready, pour a ladleful of batter onto the skillet to form a pancake.
  4. Cook until bubbles appear: Cook until bubbles begin to form on the surface of the pancake—this usually takes about 2-3 minutes.
  5. Flip and finish cooking: Carefully flip the pancake using a spatula and cook for another 2-3 minutes, or until the other side is golden brown.
  6. Serve warm: Serve the pancakes warm off the skillet, topped with your favorites.
