A creamy, garlicky soup that is heartwarming and perfect for chilly evenings.

Ingredients

  • 2 cups roasted garlic
  • 2 cups potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Chives, for garnish

Instructions

  1. Combine the roasted garlic, diced potatoes, and broth in a pot. Bring to a boil and then reduce to a simmer until the potatoes are tender.
  2. Blend the mixture using an immersion blender or transfer it to a blender and blend until smooth.
  3. Incorporate the heavy cream and fresh thyme, and season with salt and pepper to taste.
  4. Serve hot, garnished with chopped chives.

Notes

Pairs well with crusty baguette or roasted vegetables. Store leftovers in an airtight container for up to three days.
