A vibrant and comforting dish featuring bowtie pasta, juicy chicken, and fresh broccoli in a creamy garlic and lemon sauce.

  • 8 oz bowtie pasta
  • 2 chicken breasts
  • 2 cups broccoli
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the bowtie pasta according to package instructions until al dente. Drain and set aside, making sure to reserve a splash of pasta water.
  2. Melt the butter in a large skillet over medium heat until it starts to foam.
  3. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  4. Season the chicken breast generously with salt and pepper, then add to the skillet and cook for 6-7 minutes per side until golden brown and cooked through.
  5. Steam or blanch the broccoli until bright green and tender-crisp.
  6. Add the cooked pasta and broccoli to the skillet.
  7. Pour freshly squeezed lemon juice over the mixture and stir to combine.
  8. Sprinkle with chopped parsley and serve hot.

Notes

Serve with a garden salad or garlic bread. Can be adapted with shrimp, tofu, or different vegetables.
