A delightful and simple dish featuring buttery chicken, vibrant broccoli, and zesty lemon, perfect for weeknight dinners.

  • 2 cups bowtie pasta
  • 1 lb chicken breast, diced
  • 2 cups broccoli florets
  • 1/2 cup butter
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Bowtie Pasta: Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente. Remember to reserve a cup of pasta water for later!
  2. Melt the Butter and Sauté Garlic: In a large skillet over medium heat, melt the butter. Once it’s sizzling, add the minced garlic and sauté until it’s fragrant, about 1 minute.
  3. Sauté the Chicken: Add the diced chicken to the skillet. Season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  4. Cook the Broccoli: Stir in the broccoli florets and continue cooking until they are tender, about 3-4 minutes.
  5. Add Lemon Zest and Juice: Pour in the lemon juice and add the zest. Stir everything together.
  6. Combine Pasta with Chicken and Broccoli: Drain the bowtie pasta, adding it directly to the skillet with the chicken and broccoli mixture. Toss everything together, adding a splash of reserved pasta water as needed.
  7. Season to Perfection: Taste and adjust seasoning with salt and pepper as needed.
  8. Serve and Garnish: Plate the dish warm, garnishing with fresh chopped parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. This dish freezes well for up to 2 months.
