  • 1 lb boneless skinless chicken breast, cut into bite-size pieces
  • 2 cups broccoli florets
  • 4 tbsp unsalted butter
  • 3 cloves minced garlic
  • 1 tsp ranch seasoning mix
  • 1 lemon, zested and juiced
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh chives
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the pasta: Bring a large pot of salted water to a boil, add the bowtie pasta, and cook according to package directions until al dente. Drain and set aside.
  2. Sauté the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5–7 minutes.
  3. Prepare the Cowboy Butter: Push the chicken to one side of the skillet. Add the butter and let it melt, then stir in the minced garlic and ranch seasoning. Cook for 1 minute until fragrant.
  4. Add the broccoli and lemon: Add the broccoli florets, lemon zest, and lemon juice to the skillet. Toss to coat and cook until the broccoli is tender-crisp, about 3–4 minutes.
  5. Combine with pasta: Add the cooked pasta to the skillet and toss everything together, ensuring the pasta is well coated.
  6. Finish with fresh herbs and cheese: Stir in the Parmesan cheese, chopped parsley, and chives until evenly distributed. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.
