A vibrant one-pan meal combining creamy cowboy butter with fresh lemon, chicken, and broccoli, ready in under 30 minutes.

  • 8 oz bowtie pasta
  • 2 cups broccoli florets
  • 2 breasts chicken, cooked and diced
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the bowtie pasta and cook according to the package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets. Drain everything and set aside.
  2. In a large skillet over medium heat, melt the butter until it’s bubbly. Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to let it brown too much as we want a vibrant flavor.
  3. Add the cooked chicken to the skillet and stir to coat it with the buttery garlic mixture. Squeeze in the lemon juice and add the zest for a refreshing pop of flavor. Season with salt and pepper to taste.
  4. Finally, add the drained pasta and broccoli to the skillet. Toss everything together until the pasta is well-coated in the Cowboy Butter sauce. Heat through for another 2-3 minutes, letting all the flavors meld together.
