A vibrant, Mexican-inspired salsa made with black beans, vegetables, and zesty lime.

  • 1 can black beans, rinsed and drained
  • 1 can corn, rinsed and drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Prepare Your Veggies: In a large bowl, combine the rinsed black beans and corn.
  2. Chop Bell Peppers: Add the diced red and green bell peppers to the bowl.
  3. Add Onion: Toss in the diced red onion.
  4. Incorporate Tomatoes: Fold in the halved cherry tomatoes.
  5. Introduce Avocado: Gently incorporate the diced avocado.
  6. Freshen with Cilantro: Sprinkle in the chopped cilantro.
  7. Drizzle with Lime: Squeeze the juice of two limes over the mixture.
  8. Season: Add salt and pepper to taste.
  9. Mix and Serve: Gently mix until well combined and serve immediately.
