A comforting and hearty dish that combines cornbread with savory veggies, beans, and cheese, perfect for any meal.

Ingredients

  • 1 package of cornbread mix
  • 1 can of black beans, rinsed and drained
  • 1 cup of corn, frozen or canned
  • 1 cup of diced tomatoes
  • 1 cup of shredded cheese
  • 1/2 cup of diced onion
  • 1/2 cup of diced bell pepper
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • Salt and pepper to taste
  • 2 eggs
  • 1 cup of milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the cornbread mix, eggs, and milk, stirring until just blended.
  3. Fold in black beans, corn, diced tomatoes, onion, bell pepper, chili powder, cumin, salt, and pepper.
  4. Spread the mixture in a greased baking dish.
  5. Sprinkle shredded cheese on top.
  6. Bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Let it cool slightly before serving. Enjoy your cowboy cornbread casserole!

Notes

For a spicier version, add more chili powder or diced jalapeños. You can customize with different cheese or vegetables.
