A delightful Cowboy Quiche filled with bacon, bell peppers, and spinach, perfect for brunch or a light dinner.

Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup diced cooked bacon or sausage
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 unbaked pie crust

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs and milk until well combined.
  3. Mix in the shredded cheese, cooked bacon or sausage, diced bell peppers, chopped spinach, salt, and pepper.
  4. Pour the mixture into the unbaked pie crust.
  5. Bake for 35-40 minutes, or until set and lightly golden on top.
  6. Rest the quiche before slicing and serving.
