A warm and creamy chicken gnocchi soup that’s perfect for chilly evenings, packed with flavors and nutrition.

Ingredients

  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 package gnocchi (about 16 ounces)
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes.
  2. Add the onion, carrots, celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Pour in the chicken broth and bring the mixture to a simmer.
  4. Stir in the gnocchi and cook according to the package instructions, about 2-3 minutes.
  5. Reduce the heat and add the heavy cream and fresh spinach. Stir until the spinach is wilted.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with freshly grated Parmesan cheese.

Notes

For a quicker prep, dice your vegetables and chicken ahead of time. You can substitute rotisserie chicken for the raw chicken for a faster version.
