A delicious one-pot meal featuring tender chicken simmered with zesty tomatoes and salty olives, perfect for cozy dinners.

Ingredients

  • 4 chicken thighs or breasts
  • 2 cups tomatoes, diced
  • 1 cup black olives, pitted and sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 teaspoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Add the chicken to the pot and brown on both sides, about 5 minutes per side.
  3. Remove the chicken from the pot and set it aside.
  4. Sauté the onion and garlic in the same pot until softened.
  5. Mix in the diced tomatoes, olives, oregano, thyme, salt, and pepper. Let it cook together for a few minutes.
  6. Combine the browned chicken back into the pot and pour in the chicken broth.
  7. Bring to a boil, stirring to combine.
  8. Reduce the heat to low, cover, and simmer for 25-30 minutes until the chicken is cooked through and tender.
  9. Garnish with fresh parsley before serving.
