  • 1 cup milk
  • 1/2 cup mayonnaise
  • 2 eggs
  • 1 can creamed corn
  • 1 cup cooked crawfish tails
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish or cast iron skillet.
  2. In a large bowl, combine cornmeal, milk, mayonnaise, and eggs, mixing until smooth.
  3. Add creamed corn, crawfish tails, cheddar cheese, green onions, baking powder, salt, and black pepper; mix until well combined.
  4. Pour the batter into the prepared baking dish, filling it evenly.
  5. Bake for 25-30 minutes or until the top is golden brown and a toothpick inserted comes out clean.
  6. Let the cornbread cool slightly before serving.
