Delicious and vibrant mini sweet peppers stuffed with a creamy cheese mixture, perfect for snacks or appetizers.

  • 12 mini sweet peppers
  • 4 oz cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped chives, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut the tops off each mini sweet pepper and remove the seeds and membranes.
  3. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Using a spoon or piping bag, gently stuff each mini pepper with the cream cheese mixture.
  5. Place the stuffed mini peppers on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes.
  6. Remove from the oven and let the peppers cool slightly.
  7. Sprinkle chopped chives over the top for garnish and serve warm.

Notes

These stuffed peppers can complement salads or be served on grilled chicken. Store leftovers in the fridge for up to 3 days.
