A comforting and creamy creamed corn dish that pairs perfectly with roasted meats and brings warmth to any meal.

Ingredients

  • 4 cups fresh corn, kernels removed from about 6 ears of corn
  • 1 cup heavy cream
  • 1 cup milk
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup breadcrumbs, for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Melt the butter in a large saucepan over medium heat.
  3. Add the flour and whisk for about 2 minutes until it forms a roux.
  4. Gradually whisk in the heavy cream and milk, cooking until the mixture thickens, about 5-7 minutes.
  5. Stir in the corn, salt, pepper, garlic powder, and onion powder, mixing well.
  6. Remove from heat and fold in the cheddar and parmesan cheese until melted and combined.
  7. Transfer the mixture to a greased baking dish and sprinkle breadcrumbs evenly on top.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  9. Let it cool for 5 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
