  • 8 oz penne pasta
  • 1 lb chicken breast, diced
  • 2 cups broccoli florets
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Cook the penne pasta according to the package instructions. Once it’s nice and al dente, drain and set it aside.
  2. Sauté the chicken in olive oil over medium heat until beautifully browned, about 7-8 minutes.
  3. Add the minced garlic and broccoli florets. Sauté for 3-4 minutes until the broccoli is tender but still crunchy.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until it melts into a rich sauce.
  5. Season with salt and pepper to taste.
  6. Combine the cooked penne pasta with the chicken and broccoli sauce, tossing until well coated. Serve warm.

Notes

For extra flavor, marinate the chicken in Italian seasoning before cooking. Substitute penne with brown rice pasta for a gluten-free option.
