A warm, cheesy dish of bell peppers stuffed with creamy chicken and cheese filling, perfect for a cozy dinner.

  • 4 large bell peppers
  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Mix the cooked chicken, cream cheese, cheddar cheese, diced onion, garlic powder, salt, and pepper in a large bowl.
  4. Stuff each bell pepper generously with the chicken mixture.
  5. Place the stuffed peppers in a baking dish and bake for 25-30 minutes.
  6. Garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. They reheat well in the oven or microwave.
