A delightful blend of creamy coconut and sweet pineapple that serves as a versatile side dish or refreshing light meal.

  • 1 cup rice
  • 1 can coconut milk
  • 1 cup pineapple chunks (fresh or canned)
  • 1 tablespoon sugar (optional)
  • Salt to taste
  • Chopped cilantro or green onions for garnish (optional)

Instructions

  1. Wash the rice under cold water until the water runs clear.
  2. Combine the rinsed rice, coconut milk, and a pinch of salt in a pot and bring to a boil over medium heat.
  3. Let it simmer by reducing the heat to low, covering the pot, and cooking for about 15-20 minutes until the rice is tender.
  4. Mix in the pineapple chunks and sugar (if using), and cook for an additional 2-3 minutes until warmed through.
  5. Fluff the rice with a fork and garnish with chopped cilantro or green onions, if desired.

Notes
