A warm and creamy seafood bisque featuring the sweetness of crab meat and shrimp, enriched with aromatic vegetables and luxurious heavy cream.

Ingredients

  • 1 cup crab meat
  • 1 cup shrimp, peeled and deveined
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 2 celery stalks, diced
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup white wine
  • 2 tablespoons Old Bay seasoning
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until softened.
  2. Deglaze with wine: Pour in the white wine and let it simmer for a few minutes until reduced.
  3. Simmer the stock: Add the seafood stock and Old Bay seasoning, and bring to a simmer.
  4. Cook the seafood: Stir in the crab meat and shrimp, cooking until the shrimp are pink and cooked through.
  5. Incorporate the cream: Lower the heat and add the heavy cream, stirring until combined. Season with salt and pepper to taste.
  6. Serve & garnish: Serve hot, garnished with fresh parsley, and enjoy with crusty bread.

Notes

For a thicker bisque, consider blending a portion of the soup before adding the cream. Fresh seafood enhances flavor and texture.
