Ingredients

Scale
  • 2 large boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 lb (450 g) twisted pasta (fusilli) or penne/rotini
  • 3 Tbsp unsalted butter, divided
  • 4–5 cloves fresh garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup chicken broth
  • 1 cup grated Parmesan cheese (freshly grated preferred)
  • 1 tsp Italian seasoning, divided
  • ¼ tsp red pepper flakes, optional
  • Fine salt & black pepper to taste
  • 2 Tbsp fresh parsley, chopped, for garnish

Instructions

  1. Boil the pasta in a large pot of salted water until al dente as per package directions. Reserve ½ cup of pasta water, then drain.
  2. Season the chicken with salt, pepper, and ½ tsp of Italian seasoning. Heat 1 Tbsp butter in a large skillet over medium-high heat and sear the chicken for 3–4 minutes on each side until golden and cooked through. Transfer to a plate.
  3. Build the garlic cream base by lowering the heat to medium and adding the remaining 2 Tbsp of butter to the skillet. Stir in minced garlic and red pepper flakes (if using) and cook for 30–60 seconds until fragrant.
  4. Deglaze the skillet by pouring in chicken broth and scraping up the browned bits. Stir in heavy cream and remaining ½ tsp of Italian seasoning. Simmer gently for 2–3 minutes to thicken.
  5. Melt the Parmesan cheese into the sauce over low heat, stirring until fully melted and smooth.
  6. Combine the chicken (with juices) back into the skillet and add the drained pasta, tossing to coat. Stir in reserved pasta water for desired sauce consistency.
  7. Finish by adjusting salt and pepper to taste. Garnish with chopped parsley and serve immediately.

Notes

For the best flavor, always use freshly grated parmesan. Add your favorite veggies for a twist.
