  • 4 chicken thighs
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon mixed dried herbs (thyme, rosemary, parsley)
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, peeled and sliced
  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken thighs with salt, pepper, and mixed herbs. Heat olive oil in an oven-safe skillet, and brown the chicken on both sides.
  3. Pour in the heavy cream and bring it to a simmer, allowing those vibrant flavors to meld.
  4. Transfer the skillet to the oven and bake for 25-30 minutes until the chicken is cooked through and tender.
  5. Meanwhile, boil the potatoes in salted water until tender. Drain, then mash with milk, butter, salt, and pepper, adjusting the creaminess to your liking.
  6. In a separate pan, cook the sliced carrots in a little water until tender. Drizzle with honey and toss to coat beautifully.
  7. Serve the creamy herb chicken with a generous scoop of mashed potatoes and those delightful honey-glazed carrots on the side.

Notes

For extra flavor, try marinating the chicken in herbs and a bit of the heavy cream for a couple of hours before cooking.
