A comforting and creamy chicken dish with aromatic herbs, tender carrots, and fluffy mashed potatoes.

Ingredients

  • 4 chicken thighs
  • 1 cup heavy cream
  • 2 tablespoons mixed herbs (such as parsley, thyme, and rosemary)
  • 2 cups carrots, sliced
  • 4 large potatoes, peeled and diced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sear the chicken thighs in olive oil until golden brown.
  3. Remove the chicken and sauté the sliced carrots for a few minutes.
  4. Combine the heavy cream and mixed herbs with the chicken and carrots in the skillet.
  5. Transfer the skillet to the oven and bake for about 25 minutes.
  6. Prepare the mashed potatoes by boiling the diced potatoes until tender, then mashing with butter, salt, and pepper.
  7. Serve the chicken alongside the creamy mashed potatoes with gravy.

Notes

Searing tips: Don’t overcrowd the skillet for the best golden crust. Use fresh or dried herbs as preferred.
