Delightfully creamy truffles with a refreshing key lime flavor, coated in toasted coconut for a delightful crunch.

  • 1/2 cup cream cheese, softened
  • 1/4 cup key lime juice
  • 1 teaspoon lime zest
  • 1/2 cup crushed graham crackers
  • 1/4 cup sweetened shredded coconut
  • 1/2 cup toasted coconut (for coating)

Instructions

  1. Melt the white chocolate chips in increments of 30 seconds until smooth and creamy.
  2. Mix together the cream cheese, key lime juice, lime zest, and crushed graham crackers until creamy.
  3. Combine the melted white chocolate with the cream cheese mixture until fully blended.
  4. Refrigerate the mixture for about 30 minutes until firm enough to handle.
  5. Roll the mixture into small balls to form truffles.
  6. Coat each truffle in toasted coconut.
  7. Refrigerate again for about 15 minutes before serving.
