A warm and comforting low carb chicken casserole loaded with tender chicken, vibrant veggies, and a creamy sauce.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cauliflower, riced
  • 1 cup broccoli, chopped
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter
  • 1/2 cup chicken broth
  • 1 teaspoon dried herbs (thyme, oregano, or basil)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat the olive oil or butter in a large skillet over medium heat.
  3. Sauté the riced cauliflower and chopped broccoli until tender, about 5-7 minutes.
  4. Mix the shredded chicken, sautéed vegetables, heavy cream, chicken broth, garlic powder, onion powder, herbs, salt, and pepper in a mixing bowl.
  5. Add half of the cheese to the mixture and stir well.
  6. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  7. Bake for 25-30 minutes or until bubbly and golden.
  8. Cool slightly before serving.

Notes

Taste the mixture before adding the final layer of cheese and adjust seasonings if necessary. Use rotisserie chicken for easier prep.
