  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Feta cheese, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then add them to the skillet. Cook until browned and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
  2. In the same skillet, add onions and garlic; sauté until onions are translucent and fragrant.
  3. Add cherry tomatoes and spinach to the skillet, cooking until the spinach wilts and the tomatoes soften.
  4. Stir in the heavy cream and oregano; bring to a simmer as the beautiful creaminess envelops the lovely veggies.
  5. Return the chicken to the skillet and coat it with the creamy sauce. Cook for an additional 2-3 minutes to heat everything through.
