  • 2 chicken breasts, diced
  • 1 cup asparagus, chopped
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden brown, about 5-7 minutes.
  3. Add minced garlic and sliced mushrooms to the skillet. Sauté until mushrooms are tender, about 3-4 minutes.
  4. Stir in chopped asparagus and cook for an additional 2-3 minutes until bright green.
  5. Pour in the heavy cream and bring to a gentle simmer. Let it thicken for about 2 minutes.
  6. Add cooked penne pasta to the skillet and toss everything together until well combined.
  7. Serve warm, garnished with grated Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm in a skillet over medium heat, adding a splash of milk to loosen the sauce if needed.
