  • 2 cups mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat the skillet: In a large skillet, heat the olive oil over medium heat until shimmering and ready.
  2. Season and brown the chicken: Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  3. Sauté the garlic and mushrooms: In the same skillet, add the minced garlic and sliced mushrooms. Sauté until mushrooms are tender.
  4. Add the chicken broth: Pour the chicken broth into the skillet and bring to a gentle simmer.
  5. Create the creamy sauce: Stir in the heavy cream and thyme, cooking for another 5 minutes until the sauce thickens slightly.
  6. Combine the chicken with the sauce: Return the chicken to the skillet, ensuring each piece is coated with the sauce.
  7. Garnish and serve: Sprinkle with chopped parsley before serving.
