A comforting dish of creamy rice melded with rich Parmesan cheese and zesty lemon juice, perfect as a side or a main.

  • 2 cups chicken or vegetable broth
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Chopped parsley, for garnish (optional)

Instructions

  1. Gather your ingredients: rice, broth, Parmesan cheese, garlic, butter, lemon juice, and seasonings.
  2. Sauté the garlic: Melt butter in a medium saucepan over medium heat, add minced garlic and sauté for 1 minute.
  3. Cook the rice: Add rice to pan, stirring to coat with butter and garlic; toast for 2 minutes.
  4. Pour in the broth: Add chicken or vegetable broth, bring to a gentle boil, cover and simmer for 15 minutes.
  5. Stir in the cheese: Remove from heat, stir in Parmesan cheese and lemon juice.
  6. Season to perfection: Taste and adjust seasoning with salt and pepper.
  7. Garnish and serve: Spoon rice into bowls and garnish with chopped parsley, if desired.

Notes

For a creamier texture, add extra broth while stirring in the cheese. Pair with grilled chicken or vegetables for a complete meal.
