A creamy and spicy pasta dish with tender chicken and vibrant bell peppers, perfect for weeknight dinners or gatherings.

Ingredients

  • 8 oz pasta
  • 2 tbsp olive oil
  • 1 lb chicken breast, diced
  • 1 bell pepper, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the pasta according to package instructions, until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until golden brown and cooked through, about 5-7 minutes.
  3. Add the sliced bell pepper to the skillet and sauté for another 3-4 minutes until softened.
  4. Stir in the heavy cream, chicken broth, Cajun seasoning, and Parmesan cheese. Mix well and let simmer for about 5 minutes.
  5. Add the cooked pasta to the skillet and gently toss to coat with the creamy sauce.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove over low heat with a splash of chicken broth or cream.
