A vibrant salad combining the sweetness of roasted beets and sweet potatoes with tangy feta, perfect for any occasion.

Ingredients

  • 2 Beets
  • 2 Sweet potatoes
  • 100g Feta cheese
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper to taste
  • 2 tbsp Lemon juice
  • 2 cups Spinach or mixed greens

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes and beets.
  3. Toss the sweet potatoes and beets with olive oil, salt, and pepper.
  4. Spread them on a baking sheet for optimal roasting.
  5. Roast in the oven for about 25-30 minutes until tender.
  6. Combine the roasted vegetables with your choice of spinach or mixed greens.
  7. Crumble feta cheese on top of the warm vegetables.
  8. Drizzle with lemon juice and additional olive oil if desired.
  9. Toss gently and serve.

Notes

For added flavor, consider mixing a splash of sour cream or Greek yogurt with your feta.
