A comforting dish of pasta dressed in a creamy sauce with succulent salmon and fresh spinach.

Ingredients

  • 200g pasta (fettuccine or your choice)
  • 2 salmon fillets
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant.
  3. Season the salmon fillets with salt and pepper. Place in the pan and cook for about 3-4 minutes per side until cooked through. Remove and flake into bite-sized pieces.
  4. Add heavy cream to the pan and bring to a gentle simmer. Stir in fresh spinach and allow it to wilt.
  5. Combine cooked pasta and flaked salmon with the creamy spinach sauce, tossing gently to combine.
  6. Serve hot, topping with a sprinkle of grated Parmesan cheese.

Notes

For variations, consider adding sun-dried tomatoes or switching salmon for shrimp or chicken.
