  • 1 cup cheese (e.g., cream cheese, Parmesan, or a mix)
  • 1 cup milk or heavy cream
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Sauté garlic in olive oil for 1-2 minutes until fragrant.
  3. Add the fresh spinach and cook until wilted.
  4. Melt in your choice of cheese, stirring until creamy.
  5. Incorporate the milk or cream and lemon juice, stirring until combined.
  6. Combine the cooked pasta with the creamy sauce, seasoning to taste.
  7. Serve hot, garnished with additional cheese if desired.

Notes

Don’t overcook the spinach; it should be tender, not mushy. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
