Creamy Tomato Basil Chicken Breast

A comforting dish featuring tender chicken breasts in a rich, creamy tomato sauce infused with fresh basil.

Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 can diced tomatoes (14 oz)
  • 1 cup heavy cream
  • 1/2 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Splash of olive oil

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat a splash of olive oil in a large skillet over medium-high heat, then add the chicken and cook for 5-6 minutes on each side until golden brown. Remove from skillet.
  3. Lower the heat and sauté minced garlic in the skillet for 1 minute until fragrant.
  4. Pour in diced tomatoes, including juice, and cook for 3-4 minutes to meld flavors.
  5. Stir in heavy cream and let it simmer for 2-3 minutes until thickened.
  6. Return the chicken to the skillet, coating it in the sauce, and simmer for another 2-3 minutes.
  7. Stir in chopped basil just before serving.

Notes

Pairs beautifully with garlic bread or pasta. Store leftovers in an airtight container for up to 3 days.
