A warm, hearty soup blending creamy goodness with Italian sausage and cheese tortellini, perfect for a chilly day.

Ingredients

Scale
  • 1 pound Italian sausage
  • 1 package (9 ounces) cheese tortellini
  • 4 cups fresh spinach
  • 1 can (14 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • Olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional for serving)

Instructions

  1. Heat the base: In a large pot, heat olive oil over medium heat and add chopped onion. Sauté until translucent.
  2. Add aromatics: Add minced garlic and cook for another minute, letting the kitchen fill with its fragrant aroma.
  3. Brown the sausage: Add the Italian sausage to the pot, breaking it apart with a spatula, and cook until browned and cooked through.
  4. Create the broth: Stir in the diced tomatoes and chicken broth. Bring to a simmer, allowing the ingredients to meld and develop flavor.
  5. Cook the tortellini: Add the cheese tortellini and cook according to package instructions until tender.
  6. Incorporate cream and spinach: Once the tortellini is cooked, lower the heat and stir in the heavy cream and fresh spinach until the spinach wilts, turning the soup a luscious shade of pink.
  7. Season to perfection: Season with salt and pepper to taste, adjusting for your palate.
  8. Serve and enjoy: Serve hot, garnished with grated Parmesan cheese if desired, and relish the comforting warmth.
