A comforting creamy pasta dish featuring chicken, cheese tortellini, and a rich garlic-infused sauce.

Ingredients

  • 1 lb boneless skinless chicken breast
  • 8 oz cheese tortellini
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the chicken breast with salt, black pepper, and Italian seasoning on both sides.
  2. Sauté the chicken in olive oil and butter over medium heat for 5 to 7 minutes on each side until golden brown. Remove and let it rest before slicing.
  3. Add minced garlic to the same skillet and cook for about 1 minute until fragrant.
  4. Stir in chopped sun-dried tomatoes and cook for another 2 minutes.
  5. Pour in chicken broth to deglaze the pan, scraping any browned bits.
  6. Add heavy cream and bring to a gentle simmer, stirring in grated Parmesan until melted.
  7. Fold in baby spinach and red pepper flakes until the spinach wilts.
  8. Combine sliced chicken and cheese tortellini, simmer for an additional 3 to 5 minutes until tortellini is tender.
  9. Garnish with chopped parsley and serve immediately.

Notes

For a lighter version, use half-and-half instead of heavy cream and increase baby spinach.
